Mini polenta pizza with candied tomato: this is Hanna de Caen’s recipe

In collaboration with Caen side (Calvados), Liberty regularly offers you simple and effective recipe, concocted by Hanna Granotierthe creator of the workshop Well on His Plate.

This Sunday, March 6, 2022, she invites you to make mini polenta pizzas with candied tomato.

A pizza night? To change from the traditional wheat flour dough, here is a polenta recipe. Cornmeal is easily shaped after cooking, which makes it possible to create pie bases or pancakes.

You will need for 4 people: 150 g of precooked polenta, 300 ml of water, 300 ml of semi-skimmed milk, 40 g of grated parmesan, 2 tbsp of tomatoes preserved in olive oil, salt and pepper .

Ingredients of your choice for your filling: ham, mozzarella, mushrooms, olives… it’s up to you!


Boil the water and the milk in a saucepan, then pour in the polenta semolina and stir well with a whisk. Still whisking, add the parmesan and the candied tomatoes cut into small pieces. Cook for about 5 minutes, until the polenta thickens and pulls away from the sides of the pan.

Create pizza bases with this preparation: place small piles of polenta on an oiled baking sheet and spread them immediately with the back of a spoon wet in cold water to prevent it from sticking to the dough. Try to create rounded shapes about a centimeter thick. Level the surface and garnish them with the ingredients of your choice. Drizzle with olive oil and sprinkle with oregano.

Preheat the oven to 200°C. Put the mini-pizzas in the oven and cook them for fifteen minutes. Serve them with rocket leaves and enjoy!

Hanna’s tips

People intolerant to gluten will be able to enjoy these pizzas because the cornmeal does not contain any. On the other hand, you can develop your creativity by seasoning the polenta with various spices or aromatic herbs, and by varying the vegetables and the types of cheese… What if you used Norman cheeses for a local pizza?
